For over 20 years, our multi-award-winning Amber Restaurant has been tantalising the world’s tastebuds with traditional Scottish dishes served with a modern twist.

From our iconic location beside Edinburgh Castle, our seasonally inspired à la carte menus showcase the very best of Scotland’s natural larder and include signature dishes such as our mouthwatering Taste of Scotland and Scottish Tapas menus.

Our Taste of Scotland menu, which includes a ‘trio’ starter, ‘trio’ main, and dessert beautifully paired with a dram of Scotch whisky, is available throughout the day. Guests who make an evening reservation have the option to include a pre-dinner luxury whisky tasting and tour – a favourite with those seeking a true Scotch whisky and dining experience!

In addition to Amber Restaurant (which seats 80), we have a further eight elegant whisky-themed rooms seating between 10–80 guests. This includes the glass & marble vault of our world-famous Scotch whisky collection, considered “one of the seven wonders of the Scotch whisky world” where, surrounded by 3,384 bottles of the world’s rarest whiskies, you’ll enjoy a sumptuous five-course dinner designed by our award-winning chefs, while our whisky sommeliers surprise and entice you with fine wines and exclusive single malts to complement each dish.
